Classic Creamy Italian Chopped Salad

Ingredients
  

  • 1/2 small sourdough bread You can buy croutons but I like homemade to keep ingredients clean. Serve on the side if keto or low carb.
  • 2 tbsp avocado or olive oil
  • 1/2 tsp sea salt
  • 2 -3 small to medium sized heads of Romaine lettuce
  • 1/4 lb provolone cheese
  • 1/4 lb pepperoni
  • 1/4 lb genoa salami
  • 1/4 lb ham
  • 1 red pepper thinly sliced
  • 1/2 red onion thinly sliced

Dressing

  • 1/4 cup mayo I make my own to keep ingredients clean
  • 1/4 cup Full fat greek yogurt
  • 1/4 cup red wine vinegar
  • 3 cloves garlic minced
  • 1/2 tsp oregano
  • 1/2 tsp salt
  • 1/2 tsp cayenne pepper optional
  • 1 tsp black pepper
  • 2 tbsp honey optional

Instructions
 

  • Mix your salad dressing ingredients together and place in the fridge for later.
  • Preheat your oven to 350 and line a baking sheet with parchment paper.
  • Cut your sourdough bread into cubes and toss with either olive or avocado oil and salt. Bake 15 minutes until golden.
  • Chop all the cheese and meat into pieces.
  • Place lettuce, onion, pepperoncini, and red pepper in a salad serving bowl. Toss slightly.
  • Add meat and cheese to the top.
  • Right before serving, add the croutons and dressing to salad and toss .
