Keto French Onion Cube Steak

An interesting combination of flavors for an awesome keto dinner of french onion cube steak.

Ingredients
  

  • 4 Cube steaks / minute steaks
  • Salt & black pepper to taste
  • 1 tsp Garlic powder optional
  • 1/2 tsp Onion powder
  • 2 tbsp Olive oil or avocado oil for searing
  • 2 tbsp Butter for flavor and fat
  • 1 Yellow or white onion thinly sliced Onions add carbs (~5–7 g net per cup), so moderate amount
  • 1 cup Beef broth
  • 1 tbsp Worcestershire sauce or coconut aminos
  • 1 tbsp Dry French onion soup mix low sugar / homemade ~1 Tbsp or use a low-carb version (see notes)
  • 2-3 tbsp l Heavy cream or sour cream to add creaminess, optional
  • Xanthan gum or glucomannan a small pinch 1/8 to ¼ tsp as a low-carb thickener
  • Optional Shredded cheese (Swiss, gruyere, mozzarella)

Instructions
 

  • Prep the steaks
  • Pat steaks dry, season both sides with salt, pepper, garlic powder, onion powder.
  • Optionally, you can lightly dust with a low-carb flour substitute (e.g. almond flour or very light coating of crushed pork rinds), though it’s not necessary.
  • Sear / brown
  • In a heavy skillet (cast iron is ideal), heat oil + a bit of butter over medium-high heat.
  • Sear steaks for 3–4 minutes per side until nicely browned. Remove from pan and set aside.
  • Cook the onions
  • In the same skillet, reduce heat a bit and add onions (and some more butter or oil if needed).
  • Sauté slowly, stirring, until they’re softened and starting to caramelize (15-20 minutes). Don’t rush this — good onion flavor is key.
  • Deglaze & build gravy
  • Pour in beef broth and Worcestershire, scraping up browned bits from bottom of pan.
  • Stir in the dry French onion mix (or your homemade seasoning) to help flavor the sauce.
  • Thicken (low-carb style)
  • Combine a small pinch of xanthan gum or glucomannan with a little cold water (a slurry), then whisk into the pan.
  • Simmer gently until the gravy thickens.
  • Taste and adjust seasoning (salt, pepper) as needed.
  • Return steaks & finish
  • Nestle the browned steaks back into the gravy.
  • If using, stir in a little heavy cream or sour cream to enrich the sauce.
  • Top each steak with cheese (if desired). If the skillet is ovenproof, you can place it under a broiler just long enough to melt the cheese.
  • Serve

Notes

Onions are moderate in carbs, so keep their quantity in check (e.g. 1 onion rather than 3).
The “French onion soup mix” often has added sugars or starches; you can make your own by combining onion powder, beef bouillon powder, garlic powder, parsley, and optionally some dried herbs.
Using xanthan gum (or similar) lets you thicken without cornstarch or flour.
If using cheese and a bit of cream, you add some fat (good for keto) with minimal carbs.
