This is a low carb, keto inspired recipe for Marry Me Chicken. It’s rich, creamy, and perfect for a weeknight dinner—made all in one pan!

- 4 boneless skinless chicken thighs (or breasts if preferred)
- 2 tbsp avocado oil
- 3 cloves garlic minced
- 1 cup heavy cream
- ½ cup chicken broth look for no sugar added
- ½ cup grated Parmesan cheese
- ½ tsp crushed red pepper flakes optional but adds a punch
- 1 tsp Italian seasoning
- ⅓ cup sun-dried tomatoes packed in oil, drained and chopped
- ¼ cup chopped fresh basil or 1 tsp dried
- 1 tbsp cream cheese
- Salt and black pepper to taste
Prep the Chicken: Season chicken thighs with salt, pepper, and a bit of Italian seasoning.
Sear the Chicken: Heat oil in a large skillet over medium-high heat. Sear chicken for about 4–5 minutes per side until golden brown and nearly cooked through. Remove from skillet and set aside.
Make the Sauce: In the same skillet, add garlic and sauté for 30 seconds. Pour in the chicken broth and deglaze the pan, scraping up the brown bits.
Creamy Goodness: Lower heat and stir in heavy cream, Parmesan, Italian seasoning, crushed red pepper, sun-dried tomatoes, and cream cheese. Simmer for 2–3 minutes until thickened.
Finish It Off: Return chicken to skillet. Spoon sauce over the top, cover, and let simmer on low heat for 5–8 minutes until chicken is fully cooked.
Garnish & Serve: Sprinkle with fresh basil before serving.
