Here's a delicious Keto/Low-Carb Egg Roll in a Bowl recipe that swaps out traditional egg roll wrappers for a tasty, low-carb filling.

Ingredients
  

  • 1 lb ground beef or ground chicken/turkey/pork
  • 1 tbsp avocado oil or olive oil
  • 1/2 medium onion thinly sliced
  • 3 cloves garlic minced
  • 1 inch piece fresh ginger minced or grated
  • 1/4 cup soy sauce or coconut aminos for a gluten-free option
  • 1 tbsp rice vinegar or apple cider vinegar
  • 1/2 tsp ground black pepper
  • 1/4 tsp crushed red pepper flakes optional, for heat
  • 1 small cabbage about 3-4 cups shredded, or 1 bag of pre-shredded coleslaw mix
  • 1 large carrot julienned or shredded (optional, for color, can be skipped for stricter keto)
  • 2 green onions sliced (for garnish)
  • 1 tbsp toasted sesame seeds optional, for garnish
  • tbsp salt

Instructions
 

  • Cook the Protein of Choice
  • Heat avocado oil in a large skillet or wok over medium-high heat.
  • Add ground pork (or ground chicken/turkey) and cook until browned, breaking it apart with a spatula as it cooks, about 5-7 minutes.
  • Drain any excess fat if needed, then remove the meat from the skillet and set it aside.
  • Sauté Aromatics:
  • In the same skillet, add a little more oil if needed and sauté the sliced onion for 2-3 minutes, until softened.
  • Add minced garlic and ginger, and cook for another 30 seconds, until fragrant.
  • Add the Cabbage:
  • Add the shredded cabbage (and shredded carrot if using) to the skillet. Stir well and cook for 3-4 minutes, just until the cabbage begins to wilt but still has some crunch.
  • Season the Filling:
  • Return the cooked pork to the skillet. Add the soy sauce (or coconut aminos), rice vinegar, ground black pepper, salt and red pepper flakes (if using). Stir everything together and cook for another 2-3 minutes, allowing the flavors to meld.
  • Garnish and Serve:
  • Taste and adjust seasonings if needed (you may want a bit more soy sauce or vinegar).
  • Serve the egg roll mixture in bowls, and garnish with sliced green onions and toasted sesame seeds.
  • Optional Variations:
  • Add Mushrooms: Sauté some sliced mushrooms along with the onions for extra flavor.
  • Spicy Mayo: Top with a drizzle of keto-friendly spicy mayo (mix mayo with sriracha or a sugar-free hot sauce).
  • More Veggies: If you're not strictly keto, you can add a few more low-carb veggies like bell peppers or zucchini.
