Ingredients
  

  • 1 large head cauliflower cut into bite-sized florets
  • 1 cup sour cream full-fat
  • ½ cup heavy whipping cream
  • 1 ½ cups shredded sharp cheddar cheese divided
  • ½ cup grated Parmesan cheese
  • 4 oz cream cheese softened (can use butter – 3TBLS. instead)
  • 3 –4 slices bacon cooked and crumbled (optional but recommended)
  • 2 green onions sliced (plus more for garnish)
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp smoked paprika
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Lightly grease a 9×9″ or similar-sized casserole dish.
  • Steam or microwave the cauliflower florets until fork-tender (about 12 minutes). Drain well.
  • Place the cauliflower in a food processor with the heavy cream and cream cheese or butter and pulse until it has a somewhat smooth texture.
  • In a large mixing bowl, combine sour cream,garlic powder, onion powder, paprika, salt, and pepper. Stir until smooth.
  • Fold in 1 cup of cheddar cheese, Parmesan cheese, green onions, and cooked bacon (if using).
  • Add the cauliflower to the mixture and gently stir to coat evenly.
  • Transfer the mixture to the prepared casserole dish. Top with the remaining ½ cup of cheddar cheese.
  • Bake for 20–25 minutes, or until bubbly and golden brown on top.
  • Garnish with extra green onions or a sprinkle of smoked paprika, and serve hot.
