Low Carb White Chicken Chili

One positive to cold weather is all of the food options that seem perfect on a chilly day. Here’s a recipe for Low Carb White Chicken Chili that is satisfying and delicious. If you watch your carbs, you will want to use one of my suggested substitutions for beans. I made this in two pots because 1/2 the chili contained beans (for me) and the other half contained cauliflower as a replacement for my husband who must keep carbs very low.

Low-Carb White Chicken Chili
A tasty low carb version of a traditional favorite soup.
Ingredients
- 1 ½ lbs boneless skinless chicken breasts (or thighs), diced or shredded
- 2 tbsp olive oil or butter
- 1 small onion diced
- 3 cloves garlic minced
- 4 cups chicken broth low-sodium
- 1 cup heavy cream or coconut cream
- 4 oz cream cheese softened
- 1 4 oz can diced green chiles
- 1 tsp ground cumin
- 1 tsp chili powder
- ½ tsp smoked paprika
- ½ tsp dried oregano
- ½ tsp salt or to taste
- ¼ tsp black pepper
- ¼ tsp cayenne pepper optional for heat
- ½ cup shredded Monterey Jack or Pepper Jack cheese
- ¼ cup chopped fresh cilantro for garnish
- 1 lime cut into wedges (for serving)
- Optional Add-ins:
- Beans: Use 1 cup of drained and rinsed white beans if desired. beans have carbs
- Low-Carb Bean Substitutes: Try chopped cauliflower diced zucchini, or sliced mushrooms for texture.
Instructions
- Sauté Aromatics:
- Heat olive oil or butter in a large pot over medium heat. Add the diced onion and cook for about 3–4 minutes until softened. Stir in the garlic and cook for another 30 seconds.
- Cook Chicken:
- Add the diced chicken to the pot and cook until lightly browned (but not fully cooked), about 5 minutes.
- Add Seasonings & Broth:
- Stir in the cumin, chili powder, smoked paprika, oregano, salt, black pepper, and cayenne (if using). Add the diced green chiles and chicken broth. Bring to a simmer and let it cook for about 15 minutes until the chicken is fully cooked.
- Make It Creamy:
- Reduce heat to low. Stir in the heavy cream and softened cream cheese until fully melted and incorporated.
- Add Cheese & Optional Beans/Substitutes:
- Stir in the shredded cheese and mix until smooth. If using beans, cauliflower, zucchini, or mushrooms, add them now and let everything simmer for 5 more minutes.
- Serve & Garnish:
- Remove from heat and ladle into bowls. Garnish with fresh cilantro and serve with lime wedges.
