Of all the genres of food, my favorite is greek. One of our favorite local restaurants is Platia in Frisco, TX. https://www.platiagreek.com. It was there I discovered my love of Greek Flat Iron Steak, which they call “Brizola Steak” at the restaurant. Served with a side of tzatziki and lemon, this greek style sizzling steak is truly a treasure.

I recently hosted “Greek Night” at our home and served lamb chops, greek chicken kabobs and greek flat iron steak for the main course. Ingredients
  

  • 1.5 lbs flat iron steak
  • 1/4 cup olive oil
  • 3 tbsp fresh lemon juice
  • 2 tbsp red wine vinegar
  • 4 cloves garlic minced
  • 1 tbsp dried oregano
  • 1 tbsp fresh rosemary chopped
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1/4 cup fresh parsley chopped (for garnish)
  • Lemon wedges for serving
  • For the Tzatziki Sauce:
  • 1 cup Greek yogurt
  • 1/2 cucumber grated and squeezed to remove excess moisture
  • 2 tbsp fresh dill chopped
  • 1 clove garlic minced
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions
 

  • Prepare the Marinade:In a bowl, whisk together olive oil, lemon juice, red wine vinegar, garlic, oregano, rosemary, smoked paprika, cumin, salt, and pepper.
  • Marinate the Steak:Place the flat iron steak in a resealable bag or shallow dish and pour the marinade over it. Seal and refrigerate for at least 2 hours (or up to overnight for deeper flavor).
  • Prepare the Tzatziki Sauce:While the steak marinates, mix together Greek yogurt, grated cucumber, dill, garlic, lemon juice, salt, and pepper. Chill in the fridge until serving.
  • Cook the Steak:Preheat your grill or cast-iron skillet to medium-high heat. Remove the steak from the marinade, allowing excess to drip off. Cook the steak for 4-5 minutes per side for medium-rare, or longer for desired doneness. Let the steak rest for 5-10 minutes before slicing against the grain.
  • Serve:Slice the steak thinly and garnish with chopped parsley. Serve with lemon wedges and the homemade tzatziki sauce on the side. For a complete meal, pair with grilled vegetables or a fresh Greek salad.
