Classic Creamy Italian Chopped Salad

Classic Creamy Italian Chopped Salad

This Classic Creamy Italian Chopped Salad is one of those recipes that works for just about any occasion. It’s hearty enough to stand on its own as a meal, yet pairs beautifully with main dishes like my Bruschetta Chicken when you’re serving a crowd. Crisp romaine, savory Italian meats, creamy provolone, and a bold homemade dressing come together in a salad that disappears fast—every single time.

Whether you’re feeding family, hosting friends, or meal prepping for the week, this salad is a true crowd pleaser.

Why This Salad Works

What sets this chopped salad apart is balance. You get crunch from the romaine and peppers, richness from the meats and cheese, and just the right tang from the creamy Italian dressing. Everything is finely chopped, so every bite is flavorful and satisfying.

It can be:

  • main dish salad (serves 4 generously)
  • side salad for entertaining (serves 6–8)
  • build-your-own option for mixed dietary needs

A Note on Homemade Croutons (and Clean Ingredients)

I love homemade croutons because I can control the ingredients. Most store-bought croutons contain seed oils and preservatives that help them sit on shelves longer—ingredients I avoid completely.

That said, homemade croutons do take a little extra time. If I don’t have time to make them, I simply serve them on the side so those avoiding bread or eating low carb can skip them.

Tips for the best croutons:

  • Any bread works—stale bread is actually perfect
  • Toss with olive or avocado oil and sea salt
  • For extra flavor, add a little melted butter before baking
  • Bake until golden and crisp

They’re optional—but absolutely delicious.

Creamy Italian Dressing You’ll Want to Make Again

This dressing is creamy, tangy, and bold without being heavy. Using a mix of mayonnaise and full-fat Greek yogurtkeeps it rich but balanced, and making it at home lets you skip added sugars and questionable oils.

The optional honey adds a touch of sweetness, but the dressing is excellent without it—especially if you’re keeping things low carb.

Serving Suggestions

  • Serve as a standalone meal with larger portions (serves 4)
  • Pair with Bruschetta Chicken, grilled chicken, or steak
  • Add to a spread with Italian-inspired dishes for entertaining
  • Serve croutons and honey-sweetened dressing on the side for flexibility

Make-Ahead & Storage Tips

If you think you’ll have leftovers, don’t dress the entire salad.
Store the chopped salad and dressing separately, then toss only what you plan to eat. This keeps everything fresh and crisp for the next day.
