Mexican Riced Cauliflower and Chicken Bowl

You could eat the riced cauliflower as a side with tacos, nachos, etc., but by adding chicken, this recipe transforms the cauliflower to a hearty meal. Caution to those of you who do not like spicy food because this dish has a bite to it!

Mexican Riced Cauliflower Bowl with Chicken

A spicy dish using Trader Joe’s Mexican Riced Cauliflower

Ingredients
  

  • 1 bag Trader Joe’s Spicy Mexican Riced Cauliflower
  • 1 lb chicken cut into strips
  • 1 tbsp avocado oil
  • 1 tbsp butter
  • 1 sliced avocado
  • 1/2 cup freshly shredded cheddar cheese
  • 1/4 cup chopped cilantro (optional)

Instructions
 

  • Make Trader Joe’s Riced Cauliflower as instructed on package.
  • In a separate skillet, sauté chicken strips or chunks in an avocado and butter blend. Cook until golden brown on both sides. This should take 3-5 minutes per side at medium heat. Remove the chicken and set aside.
  • Pour the riced cauliflower in a serving dish. Add the chicken to the top.
  • Serve hot and adorned with avocado slices, shredded cheese and fresh cilantro,
