Burger Buns without Carbs

Hamburgers are on our rotation of meals every week. Since we follow a low carb, no seed oil diet, we needed a way to make buns for our burgers. Many times we eat just the meat, but it is nice to have “buns” occasionally. These grain free burger buns with almost no carbs can be used for so many other type of sandwiches too. Each burger bun has 2g of carbohydrates. A traditional hamburger bun typically contains 25-30g of carbohydrates, depending on the brand and size. If it’s a larger bun or one with added sugar, the carb count can be higher. What’s really crazy is that most people pair a hamburger with fries. A medium order of fries at Chick Fil A has 45 carbs. We try to keep our carb count below 20g for a day, so one traditional burger on a bun and fries is a big NO WAY.

Buns are primarily to hold the meat so why would you want to sabotage your diet with a traditional hamburger bun when you can substitute with a grain free burger bun without carbs? You have to make them, but they are easy and fast. In addition, you can make them ahead of time and be ready to go when the time is right. Better yet, make several batches and freeze them taking out only what you need at dinner time.

Homemade carnivore/keto buns for burgers.

Equipment

  • 4 Small 4" baking pans

Ingredients
  

  • 1 tbsp butter
  • 1 cup grated mozzarella cheese
  • 1 tbsp mascarpone
  • 1 tbsp unflavored gelatin

Instructions
 

  • Preheat the oven to 365 degrees.
  • Melt butter in a small ramekin and coat the insides of 4-4" baking pans.
  • Mix eggs, mozzerella, mascarpone, gelatin together in a bowl.
  • Spoon mixture evenly between the 4 baking pans.
  • Bake for 15 minutes. Take out of the oven and flip each bun over.
  • Bake an additional 5 minutes.
  • Load up your hamburger and enjoy!
  • Each bun has 2g carbohydrates.
