If you’ve ever been to Godfather’s Pizza, you know about their taco pizza—my husband used to order it all the time. He loved the flavors, the spice, and that satisfying crunch. Since we follow a keto lifestyle now, I wanted to recreate that memory but with clean ingredients and a fraction of the carbs. This Keto Mexican Pizza hit the spot. When I served it, my husband said it might be even better than the original!

The Secret to the Perfect Keto Pizza Crust

The homemade crust is made from just mozzarella, egg, and almond flour—a technique I’ve also used to make delicious keto bagels. The result is a chewy, golden crust that gets crispy when rolled thin, perfect for stacking on those taco-inspired layers.

If you’re short on time, you could use store-bought egg wraps (like Egglife), but I really recommend trying the homemade version at least once. It’s incredibly satisfying!


️ Let’s Talk Sauce

We used a red enchilada sauce, and I truly believe that’s what took this dish over the top. The spice, the tang, the rich tomato base—it brought the whole thing together. You could also try this with a green chile enchilada sauce if that’s more your style, but we’re partial to the red one.

Just make sure whatever sauce you choose is free of sugar and seed oils. (We like Siete brand or homemade.)

Final Thoughts

This is a  Mexican Pizza with a Keto Twist that delivers all the bold flavor and crunch without the carbs. It's like a Taco Bell favorite—remade to be low-carb, gluten-free, and seed-oil-free.

Ingredients
  

  • ½ lb ground beef or chorizo
  • 1 tbsp taco seasoning no sugar or fillers – I use Siete brand
  • ¼ cup water
  • cup sugar-free enchilada sauce or taco sauce like Siete or homemade
  • 1 cup shredded cheddar or Mexican cheese Use fresh not pre shredded!
  • Avocado oil for cooking
  • Toppings Optional but Delicious
  • Sliced black olives not for me but go for it if you like them
  • Diced tomatoes
  • Green onions
  • Fresh jalapeños
  • Sour cream
  • Avocado or guacamole Love

Low-Carb "Tortilla" Base

  • option 1 2 Egg Wraps or 2 low carb tortillas like "Egglife"

Homemade Cheesy Tortilla

  • option 2 1 1/2 Cups shredded mozzarella Recommended!! Easy and awesome!
  • 2 tbsp almond flour or 1 tbsp coconut flour

Instructions
 

  • Instructions for Option 2 base
  • Melt cheese in the microwave until gooey (about 1 min).
  • Stir in "flour" and egg to form a dough.
  • Divide and flatten into two thin circles on parchment paper.
  • Bake at 400°F for 8–10 min until golden and firm.
  • Layer the Pizza:
  • Place one tortilla/crust on a baking sheet.
  • Spread a little enchilada sauce, layer with seasoned meat and some cheese.
  • Top with second tortilla, more sauce, then the rest of the cheese. You can leave the second tortilla off the top and make 2 pizzas instead on one thick one. (See my picture)
  • Bake at 375°F for 8–10 minutes until cheese is melted and bubbly.
  • Garnish with toppings and slice into wedges.
  • Enjoy!!!

 Notes:

  • If you skip some toppings or use less cheese, you can reduce fat and calories a bit.
  • Using coconut flour instead of almond flour reduces fat slightly and carbs by ~0.5g.
  • Swap sour cream for guacamole? Add ~2g net carbs and more healthy fat.
